Wedding Cupcake Tower

My sister had asked me awhile back if I would make her wedding cupcakes!!!! Of course I said yes, how could I say no... However, they ALL had to be Gluten Free. Now is you have ever tasted anything Gluten Free you can understand my hesitation with this! I was really worried that they would taste funny or not turn out like my normal cupcakes! I had made Gluten Free cupcakes before and they were pretty decent for gluten free, but this wasn't just for fun cupcakes or for a random get together, this was for a wedding where 100 people would be eating them. I hate to make sure they tasted good, bakery quality good. So I experimented with a few flavors and talked with the Bride and Groom to see what they wanted. In the end we went with a plain Vanilla Cupcake and a Strawberry Cupcake with fresh Strawberries!!!!! The strawberry cupcakes we actually pretty amazing! I thought they were super yummy!!!! And you couldn't even tell they were Gluten Free which made them even more amazing! For the top tier I just did Vanilla cake layered with Vanilla butter cream. 

I had pre-made hundreds of these tiny red and black flowers with pearls in the center.The biggest challenge of this whole process was getting 100 cupcakes from my place in Whitby on a Thursday night to my parents cottage in Peterborough the Friday for the Wedding on Saturday without them getting stale and being able to get them iced and to the wedding venue among all the other final wedding preparations going on. Over all I think they turned out pretty great !!!!















Cadbury Cream Egg Cupcakes

For Easter this year with the family, I wanted to try something different. Last year I had heard about these Cadbury Cream Egg cupcakes with actual Cradbury Cream Eggs inside of them. I love these eggs, they are the best part of Easter..... So I knew I had to try these cupcakes.. So this year I made them, they aren't the prettiest cupcakes on the inside, but they were pretty tasty!!! The key to not having the chocolate egg melt completely while they bake is to freeze the eggs a few hours before hand!!! To finish off these cupcakes I added Chocolate Butter cream and just some vanilla butter cream tinted green for the grass, and added a few chocolate eggs to make a nest!! Yum Yum!!! very sweet though!!!







Bridal Shower

I co-hosted a bridal shower for my best friend at my place !!! The other bridesmaid and I wanted the bridal shower to be fun yet sophisticated!! Her whole wedding theme was very elegant so we wanted to make sure we stuck with that for the shower, yet had some fun with it as well!!! We wanted to do finger foods but didn't want the messy child's party feel that sometimes can come with that. 


We made individual vegetable  cups with some dip in the bottom.  

Fruit cups with yogurt dip. 



Ofcourse I made cupcakes. Lemon meringue cupcakes!!!!!!!!!! I made little blue flowers on top to go along with her blue, white and black wedding colors, and even sprinkled them with edible sparkles!! 
  
Mac and Cheese bites and Lasagna cupcakes! Not real cupcakes ofcourse, but bot are they a huge hit!!! So yummy!!!!! 

 The shower turned out amazing, and the bride made out like a bandit! We had a great time planning her shower! Congrats to the now happily married couple!!

Smore Cupcakes

These cupcakes are a diabetics nightmare! They are definitely not diet friendly!! But boy o boy are they good!! Made with a graham cracker bottom, layered with chocolate chips, chocolate cake then another layer of chocolate chips and graham cracker bits on top, and stuffed with a surprise !!!! I took these cupcakes to work and they did not last long at all. They were gone within minutes of being placed on the table!



 I love these cupcake wrappers. The blue is so vibrant!!!


 Inside the cupcakes were chocolate rolos. To make sure the rolos didn't completely melt away while they were baking, I froze them before hand and took them out of the freezer when I was ready to use them. I placed 2 rolos in each cupcake before putting them in the oven to bake. The chocolate melted however the caramel inside was still chewy! The bottom of the cupcake tasted almost like a chewy brownie. So Yummy!

I topped each cupcake with a creamy butter cream icing, a piece of graham cracker and a square of chocolate.

Boston Cream Pie Cupcake

Well here they are...... Boston Cream Pie Cupcakes... YUMMMY!!! A light vanilla cake filled with a creamy vanilla custard, and topped with a chocolate ganache!! They turned out way better than I expected. I have never made a chocolate ganache, I thought it would be a lot harder to work with than it was as well. I actually love the look of the ganache, its smooth and shiny. The one complaint I do have is that I wish there was more filling inside the cupcake. These cupcakes were made for a woman's birthday at work so ofcourse I had to add colored sprinkles!!!

Baby Shower cake

This is the first ever, 2 layer cake I have made on my very own!!! I think it turned out pretty amazing!!! I made this bear a week in advance so that it could dry and settle in place. I also made the baby blocks a week in advance so that they could dry and become hard and solid. The blocks were pretty difficult to put together and stay together. The top layer is sitting on the blocks however the blocks alone are not holding the weight of the top layer, there are sticks inside each block to bear the weight!. The couple did not know what they were having so I made the baby blanket both pink and blue. I think overall this cake impressed even me!!




Topsy Turvy Cake

I took a Topsy Turvy cake class awhile ago and this was the outcome. It was a 4 hour class and I was so worried we weren't going to be able to finish this cake! It wasn't as hard to make as I expected it to be, however I was really glad the instructor was there to save me a few times though!! Working with fondant really takes some practice but boy does it look good when you get it right!! For my first topsy turvy cake, I think it turned out quite well!!!



Cake Pop Order

Here was my first ever Cake Pop Order. She needed them to be very simple and wanted just a chocolate theme. It was for her birthday so she wanted 31 cake pops and the rest to be cake balls instead of on a stick to represent her age. The cake pops are chocolate cake dipped in milk and white chocolate, drizzled in dark, milk and white chocolate. I was really happy with how this batch turned out.
